Ginger, Easy Cream, Coconut, Pumpkin Soup

Simple, yet delicious, creamy coconut, ginger pumpkin soup, naturally vegan and gluten-free, and quite healthy. I like to cook zucchini because it adds an excellent flavor to the dishes and also has high nutritional value.. You can make this soup in a very short time.. Ingredients are also simple and readily available. I like the cream thicker and thicker, but you can make the cream lighter.

Tips:

You will need a blender to smooth the cream and soup.. Ideally, it would be better if it was a large, powerful blender.. If you have a high powered blender then you don’t even have to peel the skin off the zucchini when it’s cooked! Keep blending until the cream is of a consistent consistency.

You can add more or less water depending on whether you want thick or thinner cream.. You can use a potato masher to deep fry the zucchini after baking them in the oven.

  • 1 large zucchini (about 1.5kg)
  • 400 ml (1 can) of full-fat coconut milk
  • 400 ml of water (you can add more or less depending on consistency)
  • 2 cloves of garlic
  • 1 cubed fresh ginger
  • 1 teaspoon sea salt
  • 1 pinch black pepper
  • 1 teaspoon ground coriander

Optional extras – you can add any of the following:

  • 2 large handfuls of spinach
  • 1 large fresh coriander leaf
  • 1 cup cooked chickpeas

How to:

Cut the pumpkin in half, then remove the seeds. Bake in the oven at 220 degrees for 45 minutes. While it is cooking, peel and finely grate the ginger. Crush the garlic and finely chop it.

After the zucchini is cooked, take the zucchini out of the oven and let it cool a bit. Then cut off the ends of the stems and slice a few times and then run them through your large blender.. If you have a powerful mixer, you do not need to cut the shells, but if you do not have a powerful mixer, it will be healthier to cut the shells.. Then pour the coconut milk and water into it.. Add crushed garlic and finely grated ginger. Add salt, pepper and coriander. Blend until smooth. After mixing enough, put the ingredients in the pot.. Then cook slowly for another 10 minutes..
